This was a win! I used tomatoes from my garden (frozen, thawed, drained), added roasted corriander, 2 extra chipotles, more garlic, and put a few slices of fresh jalapenos for flavor/heat in. YUM.

Who says you can't have your cake and eat it too!

There are a few diet friendly desserts! These were not very sweet, but I don't like sweets all that much. You could tinker with the recipe.

DELIC. I will make these often I am sure!

My little vegan dessert bars are tasty. 4 carbs for the batch. I used natural peanut butter instead of almond, and sprinkled a packet of stevia on top,well about half of one.

Next time I will add about a dozen dark choc chips. Nom.

"You'll need:
1 tsp ground cinnamon
3 tbsp ground flax
2 tbsp creamy almond butter
2 tbsp coconut oil

Mix all ingredients in a bowl with a fork, you'll need it to mash up the coconut oil if it's at room temperature, I prefer not to warm it up for thicker consistency.
Put the mixture in a small, deep dish lined with parchment paper. Set in freezer to set up for 10-15 minutes, remove and cut into squares pieces. "


Time to get healthy!

I need to make some serious dietary changes. I love structure and a very black and white "this is what you can and can not have". It's common sense what is bad to put in our bodies, but harder to follow. We all do the "oh just one little piece" but that never ends well.

No more :

White flour
Sugar
Potatoes
Bread
Crackers/chips


What does that leave :

lean meats, fish
red meat in moderation
cheese in moderation
berries
all vegetables aside from carrots and potatoes
nuts
flaxseed
healthy oils

I love all those foods anyway, so now I just need to be creative in the kitchen!

My first meal was chicken and sauteed spinach. I cooked the chicken in a cast iron skillet with evoo, balsamic vinegar, lots of herbs. Cook until crispy, then bake for 15 minutes. Spinach, simple...diced garlic and habaneros, evoo, cracked pepper, applewood smoked sea salt. Saute until desired consistency.

Definitely did not feel deprived. Oh and bourbon is allowed on my list, THANKFULLY!

This is something I can stick with! I really need to get in shape, I am to young to be this overweight. It's embarrassing. I went clothes and about cried.

FIND these! 15 calories each, and 3 grams of carbs. The onion ones are great.



I got them at Kroger. Break one up, serve with guacamole or hummus. Top with a wedge of laughing cow cheese and a few turkey pepperoni slices. Use as a tostada (note, they get soggy...so get a piece of romaine lettuce, wash and dry VERY WELL. Put that down first, then layer on the rest of your toppings.

I am going to try crumbling one up, adding herbs and using as an alternative to bread crumbs. I will report back!

Visiting with Mom!

I've lived in Louisville for almost 8 years...and one person from the West Coast has come to visit! I am not sure why, Louisville is amazing. I love, love, love this city and consider it my home. Anyway, my Mom came to visit for the 2nd time. She lives near Seattle on a little island called Lummi Island. Her previous visit was in 2007, I didn't know all this area had to offer. So this time, I had a blast showing her around! 4 days was way to short, but we packed in a lot of fun!

Saturday morning started with a big brunch at home. Then off to Cherokee Art Fair . Huge art fair in the heart of the Highlands. We had fun poking around and ran into some friends. We bought a few items, though I wanted to buy everything!

After that we headed downtown. First stop was 21C http://www.21cmuseumhotels.com/ to check out the exhibits! 21C is a very cool hotel full of art exhibits. Sadly most were closed as someone was getting married there, but we had fun looking at the few that were open!

Next stop! St. Charles Exchange! A rather swanky restaurant. We ordered manhattan's, which always remind me of Papa, he loved them. I had duck and we shared lamb fat fries. Mom had the halibut. We shared chocolate mousse for dessert, and were amused that it was sprinkled in pop rocks! Dinner was fabulous, I will go there again!

After that we headed to a friends party. My Mom had fun meeting all my new friends. Bed by midnight, Sunday...busy day!!

Bourbon distillery day!! My Mom and I both love bourbon, so why not tour a few. It is Kentucky! My friend Jim drove and was the DD. First stop was Four Roses, neat little tour...and free. The grounds are lovely and it was fun to see the process. Ended with tasting 3 bourbons. Sage, my Mom and myself all enjoyed the single barrel the best! Coincidentally, I had a bottle at home. Under 25 bucks. Score! Great sipping bourbon.









We then got a little scenic tour of Frankfort, Kentucky...and stopped at Jim's Uncle's to say hi. Quick visit, then to Woodford. Including a view of the castle in Versailles.



Woodford Reserve! What a beautiful place! The grounds are incredible. You take a little bus and a walking tour. Everything was green and in bloom, what great timing.





















If you have time for just one tour and are in the area, I'd strongly suggest Woodford. I'd go again!

After that we had dinner at Claudia Sanders restaurant. While I would not go back, I am glad we tried it. Kind of historic in these parts ;).

After we got home , we were pretty wiped out...so just watched movies. It was nice to spend some time with just my Mom. Which seems to happen every 5 years!

Monday morning we headed up to Madison, Indiana. Quaint little town. The drive up is amazing. Windy country roads for 50 miles. We did some wine tasting and had lunch at a restaurant we were told "They will deep fry your Mom if you stay long enough", kind of a dive/greasy spoon. It was good though :).

In our best hiking attire...we went to Clifty Falls State Park. I LOVE camping and hiking here.












Headed home and had friends over for dinner.

Tuesday we wandered around Louisville, did some shopping and had lunch with Tammy at Hillbilly Tea. The food there is amazing and very Kentucky. They even have 6 kinds of moonshine on the menu! My Mom had the catfish sammich. I had pork and corn pone.

Later that evening we met my friends for happy hour. About 18 showed up!! I am soooo sooo lucky to know so many amazing people in Louisville. It's a big reason why I've stayed so long. We had a blast! My Mom enjoyed meeting all the people she hears so much about :). Wish we had taken more pics...

Much to short of a visit, but we had so much fun and quality time. Hopefully next time she stays a week :). Peaches helped pack!

Veal! It's what's for dinner!

Veal....concoction. Kind of like saltimbocca.

Lay out prosciutto
top with thin veal, fresh thyme, fresh ground pepper, goat cheese
Roll tightly, secure with toothpicks
Dredge in flour (I put pepper, appledwood smoked seasalt and parsley in it)
Brown in a very hot cast iron skillet (olive oil) just for a minute or 2
Bake for 10 minutes, depends how you like it

Let rest for a few minutes! Voila! Spinach sauted in olive oil, siracha and tons of garlic!

What's cooking!

Trying to use up what I have in the fridge....


Tonights dinner....made another olive oil infusion this morning (garlic, rosemary, thyme, fresh ground pepper, applewood smoked seasalt). Mixing that with fingerling potatoes. The trick to these potatoes is get your pan hot in the oven first. I use cast iron at 400 for 10 minutes. Throw potatoes in, flip after 10 minutes...add turkey kielbasa, red, yellow and orange bellpeppers, cook for 15 more minutes. Add in a few handfuls of fresh spinach, onions...whatever. 5 more and voila!

Delic! I LOVE spicy food...so I have siracha on the side.



I go through about 60-80oz of spinach per week. I put it in my juicer, make salads and cook with it a lot. Especially if it's a bit wilted.
